Select a current food or environmental human health risk. Summarize the risk to human health and the state of the art science to date (what do we know now?). Discuss analytical, toxicological or regulatory methodologies implemented to study the risk (Discuss the scientific methods uses to evaluate the risk). Why is your topic an issue? Do the practical science and management of the risk agree? Based on what is known, personally evaluate the risk to human health. Risk assessments Assignments should be 2-3 double spaced pages using a standard font (i.e. calibri, font 12). Some class time will be allotted for discussion of these issues amongst your peers and with the instructor.
