Eating History: Thirty Turning Points in the Making of American Cuisine by Andrew F. Smith.
1. During the first three weeks of the term, students will read the textbook (Smith, Eating History) and write a critical review of that book.
2. Mindmap project

3)Conduct external research (e.g., website, journals, and books). We will submit three sources to support the product or process 4%. 4) we will submit a paper (1,250 words, double spaced) describing (a) the product, (b) how it may impact his/her field of study, and (c) its connection to the course using external sources and course materials 10%. 5) Create your product or process. You may present a product, process, model, writing, or drawing of the idea (3%). All presentations may be made in PowerPoint or video and posted for the class to view in the final week of classes.
